    Wada

     ; you can adjust of course and can put garlic if you like.
    One portion chappati flour
    One portion bajri flour
    One portion jowar flour
    Two portions of corn meal ( makai atta)
    Handful of methi or to taste
    Shift attas so there is plenty of air and put enough oil mon like puris .
    Add masalas; ginger , chilli, salt, turmeric, sugar , coriander (optional)
    And make tight dough with dahi . You probably need to add lemon juice because dahi is never rangy enough unless home made .
    You may also want to leave the sugar and salt till next morning as they will make liquid .
    Leave overnight or at least 6/8 hours
    When ready to make , take each frying portion and add hot oil like we do for bhajiya . ( you may want to add eno here which I resist because it makes them greasy)
    Mix . Make small round goina. Put in between plastic and press with vatki or just make wada and fry .
    Enjoy.
    I think the trick is to have the lot quite stiff like puris so they fluff up . Mine very rarely do . If you don’t mind messy oil you can add sesame seeds on them as you fry .
